- 2 cups chopped cooked chicken
- ½ cup celery, chopped
- ¼ cup red onion, chopped
- ¾ cup mayonnaise
- 2 tsp lemon juice
- 2 tsp soy sauce
- 1 tsp curry powder
Mix chicken, celery, and red onion in a bowl. In a separate bowl, mix mayonnaise, lemon juice, soy sauce, and curry powder. Add the mayonnaise mixture to the chicken mixture. Refrigerate and let stand overnight for full flavor. This is a great make-ahead meal!
Consider placing the salad mixture on top of mixed greens. Add ½ of an avocado and tomato or sliced veggies and pieces of fruit.
