Ingredients:
-1 pound grass-fed ground beef
-1 large head of caulifower, cut into small forets
-1/2 an onion, chopped
-2 cups shredded cheddar cheese, plus ½ cup for topping
-3 ounces cream cheese
-1 cup heavy cream
-1/8 tsp garlic powder
-salt/pepper to taste
Directions:
-Pre-heat oven to 375 degrees.
-Place cauliflower florets into boiling water until tender, about 8 minutes. Drain in colander and place in casserole dish.
-Brown ground beef with chopped onions. When done, pour in casserole dish with cauliflower.
-In a saucepan, add the remaining ingredients and melt the cheeses on medium heat, stirring constantly so it doesn’t burn, until bubbly.
-Pour cheese mixture into casserole dish and mix well.
-Put remaining ½ cup of shredded cheddar cheese on top
-Bake, uncovered for 15 minutes or until cheese on top is melted and slightly browned.
